For most, January brings the most wonderful time of the year to a close with our money and our waistbands a little on the tight side!

Fortunately, I’ve got three healthy soup recipes that are low calorie and low cost, with a healthy chunk of your five a day thrown in for good measure. They’re also ideal for warming up on those cold winter evenings. Enjoy!

Hearty Minestrone

An Italian classic, this cheap recipe is super easy to make, packed with vegetables and low in calories. Perfect topped with torn chicken or beef and served with a warm chunk of wholemeal bread.

Skinny French Onion

This flavoursome, healthy soup is easy to make and the lowest of the bunch in calories, weighing in at just 70 per cup. For a bit of a treat, melt a slice of Swiss cheese onto your portion and serve with crusty French baguette.

Vitamin-packed Gazpacho

I thought I’d end with a bit of a twist. Not only is this Spanish soup jam-packed with vitamins and minerals, but it’s great if you want a break from hearty winter warmers. Amazing served with pitta bread and garnished with fresh basil.
