Whether you class it as a fruit or a nut, the oil from a coconut can help control cholesterol and its water provides valuable nutrients, such as potassium and sodium – making it one of the hottest food trends of the past year. And as it is World Coconut Day, we thought we’d share five recipes to help maximise all things coconut!

Coconut Raspberry Chocolate Chip Muffins

Perfect for when you don’t have time to make breakfast, just pre-make a batch so they’re ready to grab and go – incredibly moorish they only take 20 minutes to bake!  Recipe for these here

Spicy Coconut Chicken

For those that love something a bit more spicy, this dish is full of jalapeños, cayenne pepper and cumin. The coconut is added to give it a fruity flavour, while the spices work their magic. Recipe for this here

Baked Coconut Shrimp

These fabulous shrimps are slowly baked in a coconut based sauce, served with a sweet chilli dip, they’re brilliant for livening up a BBQ or even for a lunchtime snack! Recipe for these here

Five Minute Coconut Curry

For the vegetarian option there is this fantastic five minute coconut curry, the curry itself is very rich but incredibly healthy and also isn’t hugely spicy as the coconut keeps it mild. Recipe for this here
