Ultimate lasagne recipe

If you’re looking to cook a family feast to remember, or create sensational tastes you thought you could only enjoy on holidays in Italy, then you’ve got to give my ultimate lasagne recipe a go! Thanks to sumptuous ingredients like chorizo, bacon and parmesan, I actually find this lasagne recipe always tastes better when warmed up the next day, as its flavours intensify… Enjoy!

Ingredients

Olive oil

Salt & pepper to season

1 x courgette (sliced)

2 x onions

2 x garlic cloves

2 x teaspoons of cumin (heaped)

2 x 40g chopped tomato tins

4 x streaky bacon rashers (cut into small strips)

50 grams of chorizo (roughly 1/4 ring chopped into small pieces)

50 grams grated cheddar

50 grams grated parmesan

250 grams mushrooms (sliced)

250 grams fresh lasagne sheets

500 grams of extra lean minced beef (or minced steak, if you’re feeling very lavish!)

30ml tomato puree

250ml red wine

600ml homemade cheese sauce

1/2 jar of sun-dried tomatoes (chopped)

Handful of fresh, chopped basil

Method

1. Preheat the oven to 180°C

2. Heat olive oil in a large sauce pan and fry the onions until soft

3. Stir in the garlic, bacon and chorizo (cook for 3-4 minutes)

4. Add the minced beef and cook until brown

5. Stir in the tomato puree, tinned & sun-dried tomatoes, wine & cumin

6. Bring ingredients to the boil, then reduce the heat and simmer for 30 mins

7. Rub an ovenproof dish with oil

8. Return to the simmering meat sauce: add basil, mushrooms and season to taste

9. Place a layer of lasagne sheets at the bottom of the dish, followed by half of the meat sauce and a layer of courgettes

10. Add a second layer of lasagne sheets and spread over 1/3 of the cheese sauce

11. Add another layer of courgettes, followed by a third layer of lasagne sheets

12. Top with the remaining meat sauce

13. Cover with a fourth layer of lasagne sheets and spread over the remaining cheese sauce

14. Sprinkle the grated cheddar and parmesan on top

15. Place in the over and bake for 40-50 mins

Serving suggestions: tuck into a delicious slice of my ultimate lasagne with a crisp green salad and large glass of Malbec – mmm!
